feat(server): Wire analyzeProject to use phaseModels.projectAnalysisModel

Browse Source 
Read model from settings.phaseModels.projectAnalysisModel instead of
hardcoded DEFAULT_MODELS.claude fallback. Falls back to
DEFAULT_PHASE_MODELS if settings unavailable.
